If you have been following me on instagram lately you will see I have had a bit of thing for flowers!  I really do love beautiful blooms and capturing with my camera is one of my favourite things to do.  There’s no doubt that flowers are one of life’s simplest yet most beautiful pleasures, and there is literally no occasion that cannot be made just that little bit more special by a gorgeous bouquet of blooms.

With Valentines Day just around the corner what better dessert is there to share with your special someone than decadent Chocolate Mousse and today I have the most amazing “healthy” chocolate mousse to share with you.

It is so easy to change a few ingredients around from the traditional chocolate mousse – pipe the mixture into your glass jar – add your strawberry on top and you have a dessert that looks just like the traditional mousse but it is way better for you!

This  recipe was shared with me by my lovely nutritionalist Simone Kopkas from Health Wholistically. The mousse below was created by Dewi from Sweet Bloom Cakes and photographed by me! Enjoy!

Chai Chocolate Mousse

Ingredients
  1. 2 ripe avocados
  2. 1 ripe banana
  3. 125ml coconut cream
  4. 1/4 cup cacoa
  5. 1 heaped tbsp chia
  6. 4 tbsp maple syrup
  7. 2 tsp vanilla extract
  8. 1/2 tsp cinnamon
  9. 1/2 tsp nutmeg
  10. 1/2 cardamon (optional)
  11. 1 big pinch celtic sea salt
  12. berries or nuts to serve
Instructions
  1. Put all ingredients except mixed berries in the blender and puree till smooth
  2. If using a thermomix put all ingredients in mixing bowl and combine for 30 seconds on speed 7
  3. Pipe mousse into jars and add a layer of nuts in the middle and berries on top. Chill in fridge for minimum 2 hours before serving

Hello Everyone!  Hope you are having a lovely Australia Day long weekend.  I have some fun news to report and of course it is all about taking photos!  This week MY list is the list on the Fat Mum Slim Photo A Day Challenge!  Yay.  The first year that Chantelle started Photo a Day I did not miss a day.  Since then I have been a little bit more relaxed and joined for a month here and there.  

In 2015 Chantelle has changed things up a bit and is now creating weekly lists so you can join for a week if you like   Of course you can still join for a month or all year!  Such a great challenge to help with your creativity with your camera and photography skills.

Time for round two of my Photography Workshops which were a great success in October and November of 2014.  If you are a keen photographer, have a new camera or just really want to know how to get the most from your DSLR then this course is for you.   I have two dates available – Friday 22nd February or Sunday 1st March 2015

My course runs for 4 hours and I limit the numbers so there is only a few participants, all able to ask questions and get specific with what they want to know.  We will go over the fundamentals of shooting manual with your camera and have loads of shoot time so you really feel you have grasped how to get the perfect shot.

After a delicious lunch we will look at editing and I will go through the process of bringing your photograph to life for the internet or print.
