If you have been following me on instagram lately you will see I have had a bit of thing for flowers!  I really do love beautiful blooms and capturing with my camera is one of my favourite things to do.  There’s no doubt that flowers are one of life’s simplest yet most beautiful pleasures, and there is literally no occasion that cannot be made just that little bit more special by a gorgeous bouquet of blooms.

Sydney-based florist The Flower Man truly understand the power that the perfect floral arrangement can have to transform someone’s day. I have been busy baking and making for the kids lately and one of our favourites this week is a great banana smoothie and these delicious butternut biscuits.

Smoothies are a fantastic drink to serve at parties as they are so good for you and they can be made in a variety of flavours.

These butternut biscuits are also great on your party table as they are sugar free, wheat free, yeast free and diary free – no sugar high crazy kids after these two healthy options!

One ingredient that both of these yummy treats have is Vanilla extract!  Vanilla is such a wonderful natural sweetener and this one by Pink Pantry Vanilla is my favourite.  It is sugar free and gluten free and adds the perfect hint of sweetness to your drinks and baked items.

Before I tell you the winner of this weeks Royal Albert Giveaway it is time to share with you the recipe for the absolutely perfect, totally amazing icing that you can see on these delicious cupcakes!

Again the recipe is by Gillian from Crumbs of Comfort Cake Design who I witnessed whipping up these delights for me!

She calls it the cheats version of Swiss Meringue Butercream – I call it naughty but oh so yummy!

Cheats Swiss Meringue Buttercream
250 butter
250 copha
750 soft icing sugar
1 1/2 tablespoons magic pav
1/4 cup water
The butter and copha needs to be soft.  Melt the copha if it’s super hard and pop it in the fridge once it starts to go cloudy again it’s ready to mix.
Beat the batter and copha really well until light with no lumps. Add half the sugar and mix to combine. Add magic pav to remainder of icing sugar and add to mix.  After 30 secs add the water (and flavour and/or colour).
Beat for ten minutes .. This makes sure it’s not gritty
