Today I am sharing a fantastic gluten and nut free Easter Egg idea coutesy of GIllian at Crumbs of Comfort Cake Design

Gillian is a master at gluten free recipes and ideas after being diagnosed with Coeliac Disease a number of years ago.  She is well known for being able to help her customers celebrate special occasions while still cater for all known allergies in her baking.

This super cute idea uses Heritage nut free chocolate eggs available at Big W.  I can’t wait to give it a try this easter

Raspberry Easter Eggs

12 hollow easter eggs (with tops cut off)
2 cups fresh raspberries (or frozen, thawed)
½ cup sugar
1 tablespoon lemon juice
1 – 1 ½ teaspoons gelatin
¼ cup cold water
1 cup of cream

Directions
In a food processer, puree raspberries, and stir in sugar and lemon juice. In a small pan sprinkle gelatin over cold water and allow to stand for a minute. Stir over low heat until gelatin is dissolved, add raspberry mixture and take off heat. Refrigerate for an hour. Transfer raspberry mixture into a large bowl and beat until light and foamy. Gradually add cream and beat until thickened. Spoon or pipe mixture into chocolate eggs and refrigerate for 1-2 hours. Can be served with whipped cream, or on top of a meringue with some fresh raspberries.

Today I am featuring a beautiful party very creatively put together by the talented girls at Confetti and Crumbs

Yesterday I featured one of Nina’s stunning cakes and today I am showing off the recent party she held for her 6 year old daughter Lola.  Nina’s partner in crime in styling all of the Confetti and Crumbs events is her sister Renee.  Together they make a fantastic team with their stunning food and wonderful attention to detail styling.

Enjoy Lola’s Candy Shoppe party which uses my all time favourite colour combination pink and yellow!

Nina and Renee have use so many beautiful tableware pieces most of which you can find in the Sweet Style online store.

How perfect is the fantastic Hundreds and Thousands cake by Confetti & Crumbs!

Nina is the mastermind cake creator behind Confetti and Crumbs whose business “officially” began 16 months ago.

From her very first birthday, Nina’s mum had made all our cakes herself (for my two sisters and I). She says:- When we were younger we used to plan what cakes we wanted months in advance! Mum was amazing, and her cooking has been a huge influence on me. Renee and I are only a year apart and our birthdays fall within two weeks of each other, so we would always have combined birthdays. Mum would stay up all night creating two amazing cakes and the next morning was like wonderland had arrived in the kitchen! So from early as I can remember baking and cooking sweets was in my blood. I do have a very sweet tooth and my relationship with chocolate has stood the test of time. My daughters are 4 and 6 and now when I stay up till all hours of the morning making their cakes… the look on their face when they come into the kitchen is priceless. My proudest moment was when my then 5 year old daughter Lola saw the completed Sprinkles Cake and animatedly said “Oh Mum, I am going to fall over – that’s how good this cake is!”. I melted. Who needs approval from anyone else?
As far as favourite flavours Nina says they get asked for our Chocolate & Caramel all the time – the best of both worlds – sweet caramel and decadent chocolate.  Pineapple, Coconut and White Chocolate cake is also pretty much on par!

To see more of Nina’s beautiful work check out the Confetti and Crumbs facebook page here.

Tomorrow I look forward to bring you one of Nina and Renne’s fabulous parties which is nothing short of spectacular.
