Happy Friday Everyone!  My kids are back to school after a fantastic summer break – while it was lovely to not have to rush out the door every morning it is nice to have my days back so I have some more time to devote to my blog – horray! i am looking forward to a big year with a few new contributors and great giveaways.

To kick of Valentines month we have a wonderful tutorial from the lovely Gillian from Crumbs of Comfort Cake Cake Design as well as a giveaway.

 Gillian contacted me a few weeks ago to offer this lovely prize pack to give away and her cookie tutorial. We spoke last week and we planned everything for today but in the meantime Gillian was hit by the devastating floods in Brisbane last weekend.

Being the amazing person that Gillian is she was determined that she would get me all the info and still offer the prize even amidst the disaster that was going on around her which included the loss of a portion of her commercial kitchen plus tragic news from close friends – a true credit to her wonderful fighting spirit.

Cookie Love

Ingredients

200g butter
200g sugar
1 egg
400g plain flour
1 teaspoon of vanilla extract or vanilla bean
Red hard boiled sweets (smashed)

You will need

2 heart cookie cutters (one large & one small)
Rolling pin
Non-stick baking paper

Method
Beat butter and sugar until it lightens in colour. Add egg and vanilla and mix until completely incorporated.  Add sifted flour, this will come together. Roll cookie dough into a ball, wrap and refrigerate for an hour. Roll cookie dough out between two sheets of non-stick paper.  Using cookie cutter cut out large hearts and place on lined baking tray.  Then use the small cutter to cut heart shaped “window” in cookie.  Carefully place smashed sweets in window.

Bake at 160 oC (fan forced oven)  for 8-10 minutes.  Leave to cool on baking tray

  5. We in the south cannot imagine what it would be like living with the aftermath of floods. These beautiful cakes would cheer up anyone.
    I love cookin, my granddaugher is coeliac, so I love mking things look good to compensate for the fact that they sometimes dont taste so good
