Pancakes with Orange Blossom Syrup

Pancakes – who doesn’t love pancakes!  These delightful sugar free pancake stacks tasted amazing and when topped with the delicious Orange Blossom Syrup they went down a treat.

Pancakes with Orange Blossom Syrup

Ingredients
  1. Pancakes
  2. - 2 free range eggs
  3. - ¼ cup organic rice malt syrup
  4. - 1 cup buttermilk
  5. - 1 ¼ cups self raising flour sifted
  6. - ¼ teaspoon bi-carbonate soda (baking soda)
  7. - pinch of salt
  8. Orange Blossom Syrup
  9. - 2 oranges
  10. - 3 tablespoons of organic rice malt syrup
  11. - ¼ teaspoon orange blossom water
  12. - 1 teaspoon pure vanilla bean paste
Instructions
  1. Beat eggs and rice malt syrup together until combined.
  2. Add buttermilk and beat for 1 minute.
  3. Gently fold in the sifted flour, soda and salt to make a smooth batter. Don’t overmix.
  4. Grease frypan with oil spray and heat on a low temperature.
  5. Add large spoonful of batter, turn when bubbles appear and cook on other side.
  6. In a small saucepan combine the zest of 1 orange, juice of 2 oranges, rice malt syrup, orange blossom water and vanilla bean paste.
  7. Bring to boil. Reduce heat and simmer until sauce slightly thickens.
Serving suggestion
  1. Pour warm orange blossom syrup over pancake and top with granola or chopped pistachios. Serve with fresh ricotta with vanilla bean.
To make a pancake stack
  1. o Pour batter into well greased round metal cutters or silicon egg rings. Batter will rise so only use a small amount.
  2. o As soon as bubbles start to appear, carefully run a knife around edge to remove the cutter or egg ring. Turn pancake and cook on other side.
  3. o Stack pancakes and secure with a toothpick.
  4. o Top with fresh date.

Slow Living Workshop

To say my weekend was amazing is an understatement.  I am still flying high after spending the most glorious weekend surrounded by talented ladies from all parts of the globe.  Ladies who love to be immersed in things they are passionate about.  Ladies who love to share and inspire.   I get so much out of just being around creative souls – soaking up their enthusiasm – an enthusiasm I have, but at times is dampened by the fact that I work alone at home and when I am not working I am surrounded by little people who are quite demanding!  The slow living workshop I attended last weekend was just what I needed to give me the motivation to take exciting steps!  I am full of ideas (probably too many) so now need to bring them to life!  The possibilities are endless really.  Thank you to the amazing Luisa Brimble, Beth Kirby from Local Milk & Rebekka Seale from Camellia Fibre Company for what was a truly wonderful weekend.

The Floury Baker – Anna provided us with the most amazing tarts – not only were they a joy to photograph but Anna tarts are THE BEST I have ever tasted!
Arthur Street Kitchen – Hetty’s salads were incredible and I am in need of her recently released cook book!
Stacey Clark Stylist – Stacey was on hand to be a right hand to the girls and be our sometimes model – she also made us laugh lots! 
Sney Roy from Cook Republic – Sneh’s beautiful props were on hand for us to play with! Very envious of her collection.
Our lovely take home gifts were from The Assembly, The Jam Bandits & Maison Balzac
